Sour fresh garlic
The allicin in garlic has proved healthy for strengthening the immune system and easing blood pressure. But did you know that allicin is released to the most when eaten raw? It is not easy to endure the spicy flavor in the mouth, so Chinese people pickle fresh garlic with sugar and vinegar, which tastes crunchy, sweet and sour, and gently spicy. It is the best match with meat dishes.
Step1: soak the fresh garlic in brine for 3 hours.
Step2: prepare the sauce by mixing vinegar, soy bean sauce and sugar (preferably crystal rock sugar).
Step3: take out the garlic from the salt water and let dry.
Step4: marinate garlic in the sauce for at least 2-3 weeks. And done!
